Frittata with Lemon Braised Green Beans
From Laura Ferran Algieri Ingredients: A small handful of green beans cut into small pieces freshly squeezed lemon juice 2 eggs 2 TBS parmesan, freshly grated parsley, finely chopped salt extra-virgin olive oil
Preparation: 1.Braise the green beans in a little olive oil and lemon juice until soft. You decide yourself how lemony you want it. Don't forget to add salt. 2. Quickly whisk eggs, parsley, salt and parmesan together, don't mix to much. 3. Pour the batter over the beans, cook until half ready, turn the frittata over and cook it for another minute.
