Lettuce Wraps (Cold Cut Rollups)
Lettuce leaves – Boston lettuce Sliced luncheon meat (ham, turkey, roast beef or pastrami) Cilantro mayonnaise or mustard Scallions or bell pepper strips *Select organic ingredients for optimal nutrition.
Preparation Place lettuce leaves on workspace. Top each leaf with ½ slice of each meat (or your favorite combination. Spread the meat with the cilantro mayonnaise and/or mustard to taste. To give more flavor and nutritional value, sprinkle chopped olives or broccoli slaw on top of mayo and mustard. Roll up and secure with a toothpick. Another variation is to use guacamole in place of mayo and mustard.
