Marinated Mixed Vegetables

Ingredients:
3 cups cauliflower floret
3 cups broccoli floret
1 cup carrots, peeled, sliced
1 can button mushrooms
1 ea red pepper, minced
1/2 onion thinly sliced
2 Tbs poppy seeds
1/2 cup olive oil
1/2 to 1 tsp Xylitol*
1/2 cup olive oil
salt
pepper

Fresh Produce Preparation:
1. Blanch cauliflower, broccoli and carrots. Drain and put aside in a large bowl.
2. Combine mushrooms, red pepper, onion and poppy seeds.
3. In a small bowl mix olive oil, Xylitol, sale and pepper.
4. Pour liquid mixture over vegetables and toss well. Will keep in fridge for a few days.

Tips:*Xylitol: Pleasant, cooling sweetness with no aftertaste. Helps to maintain a balance of beneficial flora in the mouth and ear canal, especially for children. Its metabolism in the human body does not involve insulin and does not affect blood sugar levels. Provides 1/3 fewer calories than sugar - about 2.4 calories per gram. Ideal for people on sugar restricted or low carb diets.
