Marinated Mixed Vegetables

Ingredients: 3 cups cauliflower floret 3 cups broccoli floret 1 cup carrots, peeled, sliced 1 can button mushrooms 1 ea red pepper, minced 1/2 onion thinly sliced 2 Tbs poppy seeds 1/2 cup olive oil 1/2 to 1 tsp Xylitol* 1/2 cup olive oil salt pepper
Preparation: 1. Blanch cauliflower, broccoli and carrots. Drain and put aside in a large bowl. 2. Combine mushrooms, red pepper, onion and poppy seeds. 3. In a small bowl mix olive oil, Xylitol, sale and pepper. 4. Pour liquid mixture over vegetables and toss well. Will keep in fridge for a few days.
Tips:*Xylitol: Pleasant, cooling sweetness with no aftertaste. Helps to maintain a balance of beneficial flora in the mouth and ear canal, especially for children.
