Vegetable Breakfast Quiche Adapted From the South Beach Diet Cookbook
Serves 10 Ingredients: 2 pkg frozen chopped spinach 2 eggs 1 1/2 cup shredded cheese 1 cup diced onions 1 cup shredded raw carrots 1 cup diced celery 1 cup diced yellow squash 1 cup diced mushrooms 1 can water chestnuts diced 1 pkg bacon bits
Preparation: Line 9x9 glass pan with foil. Lightly oil the foil. Mix all ingredients except ½ cup shredded cheese and season to taste.Transfer to pan and pack down. Top with the ½ cup shredded cheese.Cook for 1 hr at 350°F or until a toothpick comes out clean.Cool, take out of pan and cut into appropriate portions for your breakfast.Can be stored in cold refrigerator or freezer until ready for use.
